Summer is a great time to include more fruits in your diet and push some of those denser food choices away until the colder months.
Fruits provide us with plenty of nutrients for our outdoor active bodies as well as helping to hydrate us. Fresh, whole, raw fruit is best. Enjoy them as is, or juice them! There are plenty of juicing recipes to choose from! I will include one of my favorites, below.
If your health permits, this might also be a good time to try out a raw food diet which includes nuts, seeds, fruits and vegetables – all uncooked. Get creative with salads, like the one below!
Caution is advised if you have a blood sugar regulation problem as too much fruit can spike your insulin levels. One way around this is to ALWAYS include a protein (nuts, seeds, hemp protein powder, etc) with your fruit and keep the fruit portion small.
Pineapple Pomegranate Smoothie
½ cup pineapple, diced
¼ cup pomegranate seeds
½ cup raspberries
½ cup water
Add all ingredients to a blender. Blend until mixed well and smooth. Enjoy!
Strawberry Spinach Salad
1/2 cup olive oil
1/4 cup balsamic vinegar
3 to 4 tablespoons brown sugar
1 1/2 teaspoons garlic powder
1 teaspoon mustard powder
1 teaspoon onion powder
garlic salt or garlic powder
salt and pepper
10 cups of torn fresh spinach leaves
4 cups sliced fresh strawberries, sliced
1 cup avocado, chopped
1 cup blueberries
1 mango, sliced
1/4 cup cashews
In a medium bowl, combine the dressing ingredients, and whisk together well. Add salt and pepper to taste. You can serve the dressing immediately or you can cover it and chill for an hour.
In a large bowl, combine all of the salad ingredients, except the cashew nuts. Add the dressing to the salad and toss. Sprinkle cashew nuts on top of the salad. Enjoy!
