FOOD FOR THOUGHT
To achieve optimal health, it is best to give our body WHOLE FOODS, as nature intended - ORGANICALLY GROWN FOODS, when possible, LIVE FOODS dialy and FERMENTED FOODS daily. Include the use of ONLY EXTRA VIRGIN OILS in all food preparation.
It goes without saying that to achieve optimum health, it is necessary to eliminate all refined sugars, including refined carbohydrates as well as to eliminate food additives and preservatives. All refined, hydrogenated, partially hydrogenated and trans fats pose a particular problem as the fat molecules have been altered, changing the way our bodies break down these fats and interfering with normal body biochemical processes.
While it may seem daunting to make these food choice changes, it might be helpful to look at it as a journey that occurs along a sliding scale - sometimes the scale seems to go backward, stand still or move ahead but as long as you're moving toward the healthy end of the scale - its all good!!! Be kind to yourself - it's a journey, not a race! Dr. Dean Ornish's book - "The Spectrum" addresses this brilliantly.
Even healthy foods may need to be monitored or avoided in some individuals. We are all unique in our nutritional needs. For instance, if you have thyroid weakness, it may be necessary to avoid cruciferous vegetables, millet and peanuts as these foods can interfere with thyroid hormones or if you have candidiasis it may be necessary to eliminate fruit and high carbohydrate vegetables so that the sugars in these foods don't feed the already over populated yeast within your system. WHOLE FOODS - include vegetables, fruits, grains, nuts and seeds that have not been processed. Meats, fish and unpasteurized dairy products are also included in this category. We can then prepare them in a way that is healthful and nourishing, without harmful effects.
ORGANICALLY GROWN FOODS - are usually certified organic to be free of pesticide use. Government of Canada certification information can be found here. Pesticides have been linked to serious and often fatal illness.
LIVE FOODS - include raw, uncooked foods such as sprouted seeds or beans, fresh vegetables or fruit. Unpasteurized dairy products also fit in this category. The enzymes contained in live foods remain intact and are not lost in cooking preparations, thus providing our gut with important enzymes to break our food down naturally for a more efficient digestive system.
FERMENTED FOODS - include raw sauerkraut, tempeh, natto, kimchi, fermented cheese, and fermented vegetables. The beneficial bacteria in these foods help to balance the intestinal bacteria, providing the ideal environment for optimum digestion.

EXTRA VIRGIN OILS - are extremely important so that we avoid consuming harmful substances that occur during the refining process as well as the chemical alteration of oils that are refined, which can lead to whole body illness. Look for cold-pressed and extra virgin as well as organically grown where possible.These oils all offer unique healthy fat profiles to nourish our cells.
